Culinary Techniques Every Dietetic Professional Should Master
With the number of people cooking at home on the rise, dietetic practitioners need to be able to educate clients on how to lighten up dishes while maintaining their flavor appeal or develop healthy recipes on their own. Speaker will discuss healthy cooking techniques and ways to retain nutrients during preparation and cooking, along with steps for developing recipes.
Upon successful completion of this one-hour course, the participant should be able to:
  • Identify common culinary skills that can pose a barrier to patients' and clients’ adoption of healthful recipes.

  • Discuss basic culinary techniques and understand their application to recipe adoption.

  • Develop a strategy for practicing and mastering the identified culinary techniques.

Toby is the founder of Toby Amidor Nutrition, where she provides nutrition and food safety consulting services for individuals, restaurants and food brands. Her cookbooks include The American Diabetes Association’s Create-Your-Plate Diabetes Cookbook (American Diabetes Association, 2020), The Best Rotisserie Chicken Cookbook (Robert Rose Books, 2020), Smart Meal Prep for Beginners, The Easy 5-Ingredient Healthy Cookbook, The Healthy Meal Prep Cookbook, and The Greek Yogurt Kitchen.
