OPTIMIZING NUTRIENT STATUS ON PLANT-BASED DIETS: EVIDENCE-BASED STRATEGIES FOR VEGETARIAN AND VEGAN CLIENTS
Plant-based diets continue to grow in popularity across diverse populations, including individuals managing cardiometabolic disease, cancer risk, autoimmune conditions, and gastrointestinal concerns. While well-planned vegetarian and vegan diets can support long-term health, they also present risks for nutrient inadequacy when not properly monitored.

This webinar examines current evidence and clinical best practices for assessing, monitoring, and supporting nutrient status in plant-based clients. Participants will learn how to evaluate diet quality, interpret relevant laboratory data, and develop individualized strategies that integrate food-first approaches with targeted supplementation when appropriate. Emphasis is placed on real-world counseling, evolving research, and practical application in clinical and community settings.
Upon successful completion of this one-hour course, the participant should be able to:
  • Differentiate levels of nutritional risk across various plant-based dietary patterns, including vegan, vegetarian, flexitarian, and whole-food plant-based diets.


  • Identify key nutrients of concern in plant-based populations and describe current evidence-based intake and monitoring recommendations.


  • Apply a systematic approach to interpreting laboratory markers relevant to micronutrient status in vegetarian and vegan clients.


  • Develop individualized food and supplement strategies that support long-term adequacy, adherence, and clinical outcomes.

Ginger Hultin

Ginger Hultin, DCN, RDN, CSO is a Seattle-based Registered Dietitian Nutritionist and owner of Ginger Hultin Nutrition, a virtual concierge practice specializing in integrative oncology, gastrointestinal disease, and autoimmune care. She is a board-certified oncology nutrition specialist focused on personalized, anti-inflammatory nutrition. She is adjunct faculty at Bastyr Center for Natural Health and President-elect of the Washington State Academy of Nutrition and Dietetics. Ginger is Washington’s 2024 Outstanding Dietitian of the Year and author of two nutrition books.
