NUTRITION AND KIDNEY DISEASE THROUGH STAGES 1 TO 5: HOW TO SLOW THE PROGRESSION
This course is designed for dietitians to learn how nutrition therapy slows the progression of kidney disease in patients with chronic kidney disease (CKD stage 1-5, not on dialysis). This course will also discuss patient lifestyle changes that can deter the onset of dialysis.
Upon successful completion of this one-hour course, the participant should be able to:
  • Gain a better perspective on the prevalence of kidney disease.


  • Understand nutrition risks associated with chronic kidney disease.


  • Review traditional vs new approaches to the renal diet.


  • Identify appropriate lifestyle and nutrition interventions/therapies to slow progression of kidney disease and complications.


  • Obtain the knowledge necessary to help patients meet nutritional needs, slow the progression of kidney disease, and improve quality of life.

About the Presenter: Melody Chang, MS, RD, LD, CSR
Melody Chang

Shih Min Chang, MS, RD, LD, CSR is a Board-Certified Specialist in Renal Nutrition, duly licensed by the State of Texas, with a focus on managing kidney disease across all stages, including IgA nephropathy, Polycystic Kidney Disease (PKD), and end-stage renal disease with various renal replacement therapies. Shih Min earned her Bachelor of Science in Clinical Nutrition from the University of California, Davis, and subsequently pursued her Master of Science in Nutrition Science and Health at Sam Houston State University.

Commencing her career as an adjunct professor at Sam Houston State University and an in-patient dietitian at a local hospital in 2015, Shih Min swiftly garnered experience. Her expertise extended to serving as a Diabetes education speaker at Merck and overseeing nutrition services as a manager in a long-term care facility, encompassing rigorous commercial kitchen audits.

Driven by a steadfast commitment to professional growth, Shih Min ventured into renal nutrition in 2016, joining a world-renowned dialysis company.  Recognizing her calling, she dedicated herself to providing vital nutrition-related services to dialysis patients and their families, adeptly guiding them through the complexities of such a complex chronic illness.

Inspired by a desire to proactively combat kidney disease, Shih Min embraced the opportunity to transition into preventive care. She assumed the role of renal dietitian at one of many fellow nephrologists’ offices, actively engaging in value-based care initiatives, while delivering comprehensive medical nutrition therapy to pre-dialysis patients and their families. This journey eventually culminated in the establishment of her own private practice. With an unwavering interest in expanding her practice to more humbly serve those in need, Shih Min is dedicated to fostering an understanding of holistic well-being, nurturing both body and mind.
