MEAL PREPPING FOR PEOPLE WITH DIABETES
Consumers with diabetes have the misperception that diabetes-friendly meals cannot be tasty. In addition, people with diabetes may feel that diabetes-friendly meals take a lot of time to prepare which can be difficult in their busy lives. The presenter will explain how people with diabetes can meal prep tasty and easy meals by using the American Diabetes Association’s Plate Method. In addition, the presenter will outline specific food safety concerns for people with diabetes and how to meal prep safely and healthfully.
Upon successful completion of this one-hour course, the participant should be able to:
  • Understand the advantages of meal prepping for people with diabetes.


  • Discuss the American Diabetes Association’s Plate Method applied to meal prepping.


  • Counsel clients with diabetes on how to meal prep various dishes at once while focusing on food safety techniques.

To satisfy the requirement for renewal of certification according to the Certification Board for Diabetes Care and Education (CBDCE, www.cbdce.org), courses must relate to diabetes and be part of the list of recognized providers of the CBDCE. The Commission on Dietetic Registration (CDR) is listed as an CBDCE recognized provider. Because Dietitian Central has been granted accreditation by the CDR, it therefore meets the criteria as an approved provider of CEs for CDCESs by the CBDCE. The CBDCE does not directly approve continuing education for any specific webinar or self study course.

Toby Amidor

Toby is the founder of Toby Amidor Nutrition, PC, where she provides nutrition and food safety consulting services for individuals, restaurants and food brands. She is a Wall Street Journal bestselling cookbook author and has 9 published cookbooks and her upcoming cookbook Up Your Veggies: Flexitarian Recipes for the Whole Family is due out October 2023. For close to 15 years Toby has been the nutrition expert for FoodNetwork.com, and founding contributor to their Healthy Eats Blog. Toby is a regular contributor to Forbes.com, Shape.com, EatingWell.com and others and has her own “Ask the Expert” column in Today’s Dietitian Magazine. She is also on the medical board for Forbes.com and EatThis.com and on the editorial board for Today's Dietitian Magazine. As a nutrition expert, she has been quoted in hundreds of publications and appears on local and national television shows. For 11 years Toby was an adjunct professor at Teachers College, Columbia University teaching food service management and also taught at CUNY Hunter School of Public Urban Health in New York City.
